I get it. We all have cars that we like, but we would never buy with your own money. I'll give you three of mine, and you'll drop your personal picks in the comments section.
Ford Focus ST
Why I like it: It's an immature, torque-steering hot hatch.
Why I wouldn't buy it: I think the Fiesta ST is the better car, it costs 30k in Canada.
Porsche 911
Why I like it: It's a fun, practical sports car.
Why I wouldn't buy it: The 928 is better than the classics, and Caymans are just so good, that they render the modern 911 unnecessary.
Mark V GTI
Why I like it: It's the best all-round car for under 15k.
Why I wouldn't buy it: It's a bit too polished, and the Mazdaspeed 3 is so much more fun.

Weirdly, the cars I would never buy with my own money are the ones that are on paper better than the ones I want. I would never buy a 2 seater Ferrari, I like the grand tourers, same with Lamborghini.

but most other things are just psending money for the sake of spending money,. which I dont find cool or appealing at all.

Here are my three picks:
1. Chevrolet SS
Why I like it: It's a good American sports sedan.
Why I wouldn't buy it: It's too damn expensive.
2. Lexus LFA
Why I like it: It may be a terrible halo car according to Doug DeMuro, but it appeals to me.
Why I wouldn't buy it: It's also too damn expensive.
3. Any Porsche Model Currently On Sale
Why I like it: I like Porsches.
Why I wouldn't buy it: Fully loaded, you guessed it — they're too damn expensive.

The Honda Element is one of those for me. I really like the concept of it, but I wouldn't want to spend money on one or have to drive it around all the time.

Not really. In my experience with customer cars, the E60 M5 makes the E39 look cheap when it goes wrong.

I've heard that too, but only seen 2 cars out of the 10-15 we see need them, and none with these terrible carbon problems we're led to believe they all have. Most of those cars are well past 100k miles. I think the internet has blown that out of proportion. The E39 M5 is the only car that everyone in the shop would own. On the other hand, anyone for whom $5000 is a scary number for car repairs, maybe more than once a year, has no business owning an E60.

I had to put some thought into this.
Porsche Boxster: Great to drive, but I really don't like convertibles.
E38 BMW 750i: Wonderful on the road, effortless power, incredibly comfortable & composed. Awful to work on beyond normal service. (Same applies to the 850)
1st-gen Dodge Viper GTS: Just a complete hooligan monster of a car, unruly in every way. The race cars were inspiring, and the road cars make you feel like a giddy 5 year old given the keys to a cartoon race car, but way too flashy & brutal to live with, for me.

Lotus Exige: Amazing car for driving in anger. Problem: It's only an amazing car when driving in anger. You have to have a certain kind of disposable income before you can view a >$35k car the same way someone views an old kart/atv.
^ That pretty much goes for any track car that's not an MR2 or Miata -> see: BRZ, many porsche's, and the like
An old 911: Wonderful sound and driving dynamics. Problem: Prices are super inflated right now and the maintenance is only going to get more expensive as parts become rare and knowledgable labor dwindles.
